The Perfect Go-To Green Smoothie

I love smoothies, especially in the summertime.  This Virginia heat doesn’t always leave me feeling in the mood for a big meal, so a green smoothie is a great way to pack a nutritional punch.  This smoothie is great for those who may not love “green” drinks – the spinach flavor and texture is very mild, thanks to green apple and vanilla protein powder.  My favorite ingredients in here are kind of hidden – lemon juice and fresh ginger.  They add a great freshness and zing, and are amazing for if your feeling a little bloated or sluggish.

I am always experimenting with smoothies and throwing whatever I have on-hand in the blender: vegetables, fruit, bases, nut butters, herbs and spices, you name it!  However this simple green smoothie is my favorite easy green smoothie to make.  All of the ingredients are basic pantry and fridge staples.

This smoothie is a good base to use if you wish to further customize your smoothie with different greens and ingredients.  The proportions of fruit:vegetable:liquid:ice are perfect, so if you follow this recipe as a guide you’ll have a great smoothie no matter what you throw in your blender!

Ingredients:

-2 cups fresh spinach

-1 small to medium green apple

-1/2 lemon

-1/2 inch slice fresh ginger

-1 cup unsweetened coconut milk (I use Trader Joe’s brand)

-1 scoop vanilla protein powder (I use Syntrax Matrix)

-1 cup ice

 

Instructions:

  1. In a blender, combine spinach, juice of 1/2 lemon, ginger, and coconut milk, and blend until spinach is fully incorporated into the milk.  At this point you want make sure there are no larger leaves of spinach.
  2. Chop apple into large chunks, add to blender, and blend for approximately 30 seconds until fully combined and smooth.
  3. Finally add ice and protein powder to your blender, and blend for approximately 1-1.5 minutes until smoothie is smooth and has lightened slightly in color.
